As summer approaches, family and friends are starting to plan and attend BBQ’s and pool parties. Jennifer and I wanted to come up with an easy and fermented side dish that can be quickly whipped up to bring to any potluck situation. Jennifer’s idea was to make a fresh cole slaw, but use a fermented dressing to toss it in.

We got a ton of fresh herbs, purple cabbage, onion and carrot and then made a fresh herb dressing using Bubbies Fine Foods Sauerkraut!

The recipe is really simple, and can be adjusted depending on the fresh herbs you have available to you. We used parsley, dill and cilantro. When adding the sauerkraut, feel free to add more brine from the jar to the dressing to thin it out or add more kraut flavor. We went with a half cup of brine and kraut together.

Dressing Ingredients:

1/2 cup of Bubbies Kraut
2 TBSP honey
1-2 TBSP of mustard
1 tsp black pepper
1 tsp of celery seed
1 TBSP olive oil
2 cloves garlic
pinch of salt
3 TBSP of mixed fresh herbs
    using parsley, cilantro, dill
*blend all ingredients in a food processor or blender
Thinly slice purple cabbage, carrots and white onion and toss with dressing! Serve as a side dish, on fish tacos, sliders and more!
